RUM RAISIN COOKIES
1 c. raisins
1/2 c. water
1/4 c. rum
3/4 c. sugar
1/2 c. butter or margarine
1 egg
1 3/4 c. flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1. Heat raisins, water and rum to boiling in 1-quart saucepan; reduce heat. Simmer uncovered 20 to 30 minutes or until raisins are plump and liquid has evaporated. Cool raisins. Cool raisins 30 minutes.
2. Heat over to 375. Beat sugar and butter in large bowl with electric mixer on medium speed about 3 minutes or until fluffy, or mix with spoon. Beat in egg. Stir in remaining ingredients. Stir in raisins.
3. Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookies sheet. Bake 9 to 11 minutes or until light brown. Remove from cookie sheet to wire rack; cool.
*You can substitute 1 tsp. rum extract mixed with 1/4 c. water for the rum.
**Recipe makes about 2/12 dozen cookies.
