I've been working on some knitted Easter Eggs, they turned out pretty cute! You can find the pattern here. They take very little yarn so it's a perfect way to make something cute out of those tiny bits of yarn laying around...you know, those bits and pieces you don't throw out, yet never use?!
I have also been making little birds out of my material scraps, they are rather addictive! NoMoneyMama makes them from paper but has the link to the pattern, so if you don't sew, follow her paper directions!
